Wine made from very particular vineyards. The combination of some old callet plants, which only exist in Mallorca, with a poor and mineral soil (iron oxides) on calcareous rocks, in competition with fruit trees planted among the vines, give these plots and their wines a unique character. .

Harvest in small boxes of 10 Kg. Manual and optical selection of the grapes and fermentation at a controlled temperature in cement tanks and wooden vats of 5,000 L and 3,000 L, respectively. It macerates for 25 to 30 days on average. It undergoes malolactic fermentation, part in barrels (approximately 60%) and the rest in cement tanks.
18 months in new French oak barrels with fine and very fine grain, with medium and low toasting. It rests for two months in storage before being bottled.
