The Callet variety has become our hallmark, present in all our wines, including this white. It is a unique coupage, from native varieties. From the fermentation with our own yeasts and the aging on its lees, an elegant, fresh and varietal wine is obtained.
Grape varieties 60% Callet, 30% Premsal Blanc and 10% Giró Ros.
Traditional pruning in glass (January-March 2016).
Rainfall 415 mm (October 2015-September 2016).
Harvest The harvest began in mid-September. It is made entirely by hand in small boxes of 10 Kg.
wine making
Manual and optical selection of the grapes, previously cooled in a chamber and on a bed of dry ice to prevent oxidation. Cold maceration of the Premsal Blanc at about 12ºC for approximately 10 hours in a carbonic atmosphere. Being a red variety, the callet only macerates for 2-3 hours. After pressing, they are racked in special tanks to go on to fermentation at a temperature of about 17ºC. It is fermented with own yeasts
of our vineyards, which has allowed us to delve into the typicity of our land and varieties.
Breeding
Fermented and aged on its lees for about four months in 7,000-litre stainless steel tanks.
