From the moment we began to plant, we knew that the land of the "El Rincón" farm kept all the potential of which outstanding wines are made, those that are distinguished by their marked personality. A special corner of a unique terroir. Plot of 2.02ha located at 970m altitude with sandy clay loam soils and an abundance of limestone rocks through which the roots penetrate, "El Rincón" farm supports an extreme microclimate with a wide temperature range between day and night, with abundance of sun and scarcity of rain during the maturation period.

TERROIR “FINCA EL RINCÓN”
Plot of 2.02ha located at 970m altitude, with sandy clay loam soils, with an abundance of limestone rocks through which the roots penetrate. This very special place has a more extreme microclimate, where the winters are cold and the summers hot, but with a wide temperature range between day and night, with plenty of sun and little rain during the ripening period. These conditions are excellent for obtaining special wines with a unique typicity.
ELABORATION
It has a triple selection in the vineyard, bunch selection belts, and grain selection on vibrating tables. Pre-fermentation maceration at 4ºC for 48 hours to ensure correct aromatic extraction. Subsequently, it has a period of alcoholic fermentation and post-fermentative maceration of 21 days. Malolactic fermentation takes place in barrels, with battonage on its lees.
CASK
18 months of aging in French oak barrels specially selected to add complexity to the wine, but fully respecting the aromatic and taste qualities provided by the variety.
CATA'S NOTES
Deep burlat cherry red color.
Impressive range of aromas of red and black fruits, such as currants, nectarines, blackberries and cassis, perfectly combined with spicy nuances, with cocoa, fine toasted, cream and cinnamon, give this wine an exquisite bouquet.
Its warm passage through the mouth once again highlights the intensity of the fruit. Its great concentration and finesse, together with its sweet tannins, make its finish long and pleasant, resulting in an extremely complex and elegant wine.

Roasted suckling pig, stew and legumes, shepherd's crumbs, big game, red meats in general, cured and semi-cured cheeses, barbecues, suckling pig, etc.
